Chicken and Black Bean Quesadillas
Having a few quick and easy recipes on-hand, makes it easier to prepare healthy, nutritious and FAST meals on the busiest of nights. This meal is fast and easy to get ready. I also loved that I could just use leftover grilled chicken from the night before.
Ingredients
- 1 15 oz can of black beans (drained and rinsed)
- ¾ cup Monterey Jack or Pepper Jack Cheese
- 1 cup salsa divided
- 1 cup cube or shredded cooked chicken
- 4 10" or 12" flour tortillas
- cooking spray
Instructions
- 1. Combine beans, chicken, cheese and ½ cup salsa in bowl and stir
- 2. Heat a large non-stick skillet and spray with cooking spray
- 3. Place about ¾ cup of the bean and chicken mixture on half of the tortilla and fold over (repeat with other three)
- 4. Add 2 quesadillas to pan and spray tops of quesadillas
- 5. Cook bottom until crisp
- 6. Flip and repeat on other side
- 7. Serve with dressings of your choice (lettuce, tomato, sour cream, guacamole)
